Recent Recipes for Fall/Winter
Had a request for a couple recipes I used lately, so thought I’d also share with the interwebs. Both are great fall/winter flavors and I’ll definitely be adding them to my regular rotation.
Quinoa croquettes. Good for appetizers or as a side dish. Or if you’re my husband, you make appetizers to be the same size as a side dish. We added mozzarella bites in the middle to make them more like risotto balls. Would also suggest adding panko to the mix, or rolling the ball/patty in panko crumbs after for a more crusty finish. For a large batch of 18, I used three cups cooked quinoa (made the day before), 1 carrot, 1 zucchini, 2 scallions, 2 eggs and 2/3 cup flour. We started with balls, but while sauteing (in coconut oil!) they flattened into patties, which were easier to eat after all.
Sweet potato & black bean chili. Delish. Don’t make the same mistake I did and use an entire can of chipotle peppers in adobo, unless your insides are made of steel. I’d probably do two or three peppers, since the heat really added to the flavor (ours was just really hot), depending on your tolerance. Also, it’s much easier if you prep everything first and then just add, mix and stir. Cornbread was amazing as the side.
